These are roasted, caramelized almonds covered with a paste made from almonds, milk and hazelnuts. It's made with sponge cake, cr\u00e8me p\u00e2tissi\u00e8re or cr\u00e8me catalane, covered with powdered sugar and served chilled. There are all kinds of variations, in which the cream is replaced by jam or chocolate.
